Ingredients

  • 3 T. cornstarch
  • 1 1/2 c. sugar, divided
  • 6 c. fresh or frozen blackberries
  • 1/2 c. butter, softened
  • 2 large eggs
  • 1 1/2 c. flour
  • 1 1/2 tsp. baking powder
  • 8 oz. sour cream
  • 1/2 tsp. baking soda

Preparation

Step 1

Heat oven to 350º. Stir together cornstarch & 1/2 c. sugar. Toss berries with cornstarch mixture & spoon into a lightly buttered 11x7" pan.

Beat butter at medium speed til fluffy; gradually add 1 c. sugar, beating well. Add eggs, one at a time, beating just til blended after each addition.

Combine flour & baking powder. Stir together sour cream & baking soda. Add flour mixture to butter alternately with sour cream; beginning & ending with flour. Beat at low speed just til blended. Pour over berries.

Bake for 45 minutes; shield loosely with foul to prevent excessive browning & bake 20-25 minutes or til tests done.
