Spice Cookies with Pumpkin Dip

Ingredients

  • For the cookies:
  • 1 1/2 c. butter, softened
  • 2 c. sugar
  • 2 eggs
  • 1/2 c. molasses
  • 4 c. all-purpose flour
  • 4 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1 tsp. each ginger and cloves
  • 1 tsp. salt
  • Additional sugar
  • For the Dip:
  • 1 8oz. pkg. softened cream cheese
  • 18 oz. pumpkin pie mix
  • 2 c. confectioner's sugar
  • 1/2 - 1 tsp. ground cinnamon
  • 1/4 -1/2 tsp. ground ginger

Preparation

Step 1

For the cookies:
In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add molasses, mix well. Chill overnight. Shape into 1/2' balls; roll in sugar. Place 2" apart on ungreased baking sheets. Bake at 375 for 6-8 mins., or until edges are brown. Cool for 2 mins. before removing to wire rack.

For the Dip:
This makes ALOT of dip may cut in half.
Beat cream cheese until smooth. Add pie mix and beat well. Add sugar, cinammon and ginger; beat until smooth. Serve with Cookies
