Ingredients

  • 1 large onion, minced (1 c)
  • 1/4 c minced garlic
  • 3 T olive oil
  • 2 eggs, lightly beaten
  • 2-1/2 lbs. ground beef
  • 1 c grana Padano cheese, grated
  • 1-15 oz. carton whole milk ricotta cheese
  • 1 c Panko bread crumbs
  • 1/2 c flat leaf parsley, chopped
  • 1/2 fresh basil, chopped
  • Marinara sauce

Step 1

Preheat oven to 350. In a large skillet cook onion and garlic in 1 T of olive oil, 8 mins or until translucent. Let cool.
In large bowl, combine eggs, beef, Padano, ricotta, Panko, parsley, basil, 1/2 t salt and 1/2 t pepper. Add onion mixture. Using hands, mix and combine. Shape into 2" balls. Place on baking sheets.
Brush with remaining 2 T olive oil oil. Bake 22 mins or just cooked thru. In saucepan, bring marinara sauce to boiling. Add meatballs and coat with sauce. Simmer 5 mins serve warm.
