Honey Roasted Carrots

Ingredients

  • 1-1/4 lbs carrots
  • 3 tbsp honey
  • 1/4 cup chicken or vegetable stock
  • 1 tbsp melted butter
  • 1 tbsp lemon juice
  • Pinches of cinnamon, nutmeg, and clove
  • Salt & pepper
  • 1 tbsp chives

Preparation

Step 1

Preheat the oven to 375. Peel the carrots and slice into half inch thick coins. Place the carrots in a 9x13 baking dish. Toss in the remaining ingredients, except the chives. Roast the carrots, uncovered, stirring occasionally, for 35-40 minutes or until tender. Transfer to a serving dish, sprinkle with the chives, if using and serve.
