Ingredients

    cup sugar

  • 3

    tablespoons flour or 2 1/2 tablespoons quick cooking tapioca

  • ]1/2 teaspoon cinnamon

  • 1/8

    teaspoon salt (optional)

  • 5

    cups sliced fresh beaches, skins removed

  • 1

    teaspoon lemon juice

  • 1/4

    teaspoon almond extract

Directions

Preheat oven to 425 degrees. Combine sugar, flour, cinnamon, and salt. add peaches. Sprinkle on lemon juice and almond extract. Pour into a pastry lined 9 inch pie pan. dot with butter. Adjust top crust, flute edges and cut steam vents. Back for 40 to 45 minutes or until peaches are tender and crust is golden brown.
