Ingredients
- 2 tbsp minced green onions
- 2 tbsp minced red bell pepper
- 4 tbsp unsalted butter
- 1 cup all-purpose flour
- 1 cup whole wheat pastry flour
- 2-1/2 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 1 cup. milk
- 2 tbsp Dijon mustard
- 1 tbsp granulated sugar
- 1 cup grated Cheddar cheese

Preparation
Step 1
Preheat oven to 375° F (190° C) Muffin tin, greased
1. In a saucepan over medium-high heat, combine onions, pepper and butter. Saute until soft; set aside.
2. In a bowl combine all-purpose flour, whole wheat flour, baking powder and salt; mix well.
3. In another bowl combine eggs, milk, mustard and sugar; whisk well. Stir in cheese. Add onion mixture and flour mixture; stir just until moist and blended.
4. Spoon batter into prepared muffin tin, dividing evenly. Bake in preheated oven for 20 to 25 minutes.
