Ingredients

    tbsp minced green onions

  • 2

    tbsp minced red bell pepper

  • 4

    tbsp unsalted butter

  • 1

    cup all-purpose flour

  • 1

    cup whole wheat pastry flour

  • 2-½

    tsp baking powder

  • ½

    tsp salt

  • 2

    eggs

  • 1

    cup. milk

  • 2

    tbsp Dijon mustard

  • 1

    tbsp granulated sugar

  • 1

    cup grated Cheddar cheese

Directions

Preheat oven to 375° F (190° C) Muffin tin, greased 1. In a saucepan over medium-high heat, combine onions, pepper and butter. Saute until soft; set aside. 2. In a bowl combine all-purpose flour, whole wheat flour, baking powder and salt; mix well. 3. In another bowl combine eggs, milk, mustard and sugar; whisk well. Stir in cheese. Add onion mixture and flour mixture; stir just until moist and blended. 4. Spoon batter into prepared muffin tin, dividing evenly. Bake in preheated oven for 20 to 25 minutes.
