Scotch Shortbread

These shortbreads melt in your mouth if you cook them for exactly 45 minutes. A friend of my parents gave me this recipe.

Ingredients
- 3 cups of flour
- Sift together white flour 3 times with 1 cup of rice flour (i.e. with 1/3rd of the rice flour and 1 cup of the flour each time)
- 1 cup of fruit sugar
- 1 lb of butter
- 1 tsp vanilla
Preparation
Step 1
1.) Cream butter and sugar
2.) Add flour gradually (sifted as above)
3.) Roll on edged cookie sheet
4.) Prick top dough with a fork
Bake at 250 for 45 min and then let cool (these will be melt in your mouth shortbreads) if you prefer a stiffer short bread bake for 1 hour.
Cut into fingers
