Ingredients
- 2 T olive oil
- 4 celery stalks, rough chop
- 3 lg garlic cloves, minced
- 1 roast pie pumpkin, pureed
- 5 links sweet italian sausage, skins removed
- 3 qt beef stock
- 1 qt chicken stock
- 2 C red lentils
- 1 C barley
- 1 C brown rice
- 2 bay leaves
- 2 T Rosemary
- 1 T basil
- 1 T oregano
- 1.5 " piece ginger, rough chopped
- salt and pepper to taste

Preparation
Step 1
sweat garlic and celery in olive oil for about a minute. add sausages and brown. add bay leaves, stock, pumpkin puree, lentils, barley and rice. bring to a boil and cook for 20-30 minutes, until the barley and rice are fully cooked. add remaining herbs and ginger. cook for another 10 minutes. adjust the seasoning and serve.
