Beet and Blue Cheese Salad

  • 1-1/2 lbs beets
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 2 tsp honey
  • 1 tsp dijon
  • salt and pepper
  • 6 cups mixed greens
  • 100 grams blue cheese crumbled



Step 1

Place the beets in a pot and cover with cold water; gently boil until tender. Cool the beets in cold water and then peel. Thinly slice the beets and place in bowl. Combine the vinegar, oil, honey, mustard, salt, and pepper in smaller bowl and then pour over beets. Let the bets marinate for 20 minutes. Divide the salad greens among 4 plates. Top with beets then with blue cheese.
