Ingredients

  • 1 cup uncooked Quinoa
  • 1 can chickpeas
  • 1/2 cup cranberries
  • 1/2 cup green onion
  • Red/Yellow pepper
  • Cilantro/flat leaf parsley
  • Celery
  • jalapeño
  • 6 tbsp olive oil
  • Juice of 1 lemon
  • 2 tsp grainy mustard
  • salt & pepper
  • 1 tsp maple syrup

Preparation

Step 1

Combine 1 cup Quinoa with 2 cup water or broth in a pot. Bring to boil. Turn heat on low, cover and cool for 15 minutes. Let cool for 5 minutes, fluff with fork and serve. Mix olive oil, lemon, mustard, salt & pepper, and maple syrup and pour over quinoa, chickpeas, cranberries and vegetables.
