Ingredients
- 3 lbs chuck roast
- 1 cup orange juice
- 1/4 cup soy sauce
- 2 Tablespoons vinegar
Preparation
Step 1
1. Mix juice, soy sauce, and vinegar.
2. Tenderize roast with knife punctures to allow marinade to enter roast.
3. Pour mixture over roast, cover, and marinade for 12 hours in refrigerator.
4. Remove roast from marinade (save marinade) and bake uncovered for 30 minutes at 375 degrees in a pan in which roast fits snugly.
5. Remove roast from oven. Pour marinade over roast in baking pan (sized so that marinade covers roast).
6. Cover with aluminum foil and bake at 350 degrees for 3-4 hours until fall apart tender.
7. Pour sauce over roast when serving.
I usually check roast after 3 hours and cut the roast into smaller pieces so that marinade gets to more surfaces of meat and then return it to oven for any additional baking.
