Cream Cheese Pasta

Ingredients

  • 1 onion (thinly chopped)
  • 2 carrots (thinly chopped)
  • 1 c chicken stock
  • 1 c peas
  • 1 lb penne or any desired pasta
  • 1/2 pkg cream cheese
  • 1/2 pkg mascarpone cheese
  • salt and pepper to taste

Preparation

Step 1

1. In a large pot with boiling water - and some salt - then add your pasta and cook to your desired taste.
2. In a pan add some oil - add the onion and carrots. After these have slightly softened add the chicken stock to help cook the onions and carrots.
3. Add the peas.
4. Once the pasta is cooked add it to this mixture - then add cream cheese.
5. At this point you can add some of the pasta water to melt the cream cheese. Add some mascarpone cheese or any other cheese to finish off the dish.
6. Salt and pepper to taste.
