Cheesy Tarragon Chicken

Ingredients
- 6 (4-oz.) boneless skinless chicken breast halves
- Non-aerosol cooking spray
- 2 teaspoons dried tarragon
- Black pepper, to taste
- 1.5 ounces goat cheese, crumbled
Preparation
Step 1
Preheat oven to 350 degrees. Lightly coat chicken with cooking spray and season evenly with the tarragon and pepper. Place a large oven-proof skillet over high heat. When skillet is nice and hot, coat it with cooking spray, add chicken and cook for 1 to 2 minutes per side or until golden brown. Transfer skillet to the oven and bake for 4 minutes. Evenly top each chicken breast half with crumbled goat cheese and bake for 2 to 3 minutes longer or until cheese is slightly melted and chicken is cooked through.
SERVING SUGGESTION: Steamed new potatoes and steamed green beans.
VEGETARIAN: Use non-breaded faux chicken patties.
KOSHER: Use your favorite soy cheese.
GLUTEN FREE: No changes necessary.
