Hot Sausage & Hash Brown Breakfast Casserole

  • 1 (12 oz) pkg. hot breakfast sausage
  • 1/8 cup red bell pepper
  • 1/2 cup chopped yellow onion
  • 1/4 cup sliced mushrooms
  • 1 jalapeno, seeded and diced
  • 1 1/2 cup frozen hash brown potatoes
  • 1/2 cup shredded sharp cheddar cheese, divided
  • 1/2 cup shredded pepper jack cheese
  • 1/2 cup Bisquick
  • 1 cup milk
  • 2 eggs
  • salt and pepper to taste

Preparation

Step 1

Preheat oven to 400 degrees. Spray a 9" square pan with nonstick cooking spray.

In a skillet over medium heat, add the sausage, bell pepper, onion and mushrooms, cooking until the sausage is fully cooked. Pour into the baking dish. Add the has browns and most of the cheese, reserving 1/4 cup cheddar for the top, and stir to combine.

In a mixing bowl, whisk the Bisquick, milk and eggs until well blended. Season with salt and pepper. Evenly our the egg mixture into the baking pan.

Place in oven and bake uncovered for 40-45 minutes or until a toothpick inserted comes out clean.

Sprinkle with the remaining cheese and bake another 1-2 minutes, or until the cheese is melted.

Serve alone or with hot sauce, salsa and/or sour cream.
