- 3/4 c. sugar, divided
- 4 eggs
- 1 c. pumpkin
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1/4 tsp. ginger
- 1/4 tsp. allspice
- 1/4 tsp. nutmeg
- 1 c. half & half
- 1/2 tsp. vanilla

Step 1
Heat oven to 350º. Heat 1/2 c. sugar in medium skillet over medium heat; cook til sugar is melted & golden brown, stirring constantly. Immediately pour into 8" round baking dish; tilt to coat bottom & sides of dish. Beat eggs, pumpkin, 1/4 c. sugar, cinnamon, salt, ginger, allspice & nutmeg til well blended. Add half & half then vanilla; beat til smooth. Pour over caramel. Place baking dish in larger pan; pour hot water into larger pan to 1 1/2" up sides. Bake 45-50 minutes or til tests done. Remove from water; cool on wire rack. Cover loosely with plastic wrap & refrigerate overnight. To unmold, run knife around edge of dish to loosen. Cover with rimmed serving plate; invert flan onto plate. Cut into wedges & spoon caramel over top.
