Pizza Frittata

Ingredients
- Non-aerosol cooking spray
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped onion
- 2 ounces cooked Spaghetti pasta
- 1 teaspoon Italian seasoning
- 1 1/2 cups egg substitute
- 1/2 cup shredded low fat Mozzarella cheese
- 1/2 cup tomato sauce

Step 1
Preheat oven broiler. Heat a large oven-proof skillet coated with cooking spray over medium heat. Add bell pepper and onion; cook and stir 4 minutes, or until vegetables are tender. Stir in pasta and Italian seasoning; cook and stir 2 minutes. Reduce heat to low. Pour egg substitute evenly into skillet. Cover; cook 9 minutes, or until bottom of frittata is set but top is still moist. Remove lid from skillet. Top with cheese. Place skillet under broiler. Broil 2 minutes, or until top is set but not brown. Remove frittata from broiler. Cut into 4 wedges and serve with tomato sauce.
