- 170 grams Catelli Smart Macaroni
- 1 tbsp. EVOO
- 1 tbsp. Becel
- 2 tbsp. flour
- 1 cup milk
- sea salt, pepper, dry mustard, grated nutmeg and cayenne to taste
- 2 1/2 ounces Kraft light cheddar
- 1 1/2 ounces goat cheese
- 1 1/2 ounces full fat cheese of choice - smoked cheddar, manchego, asiago, etc.
- 9 tbsp. Panko
- 3 tbsp. grated parmigiano reggiano
- 1 1/2 tsp. EVOO
- smoked paprika
Preparation
Step 1
* *Cook* macaroni according to package directions and drain.
* *Melt* butter with olive oil in same saucepan. *Mix* in flour and spices and cook roux. Gradually *add* milk and cook until smooth and thickened.
* *Stir* in cheeses and cook over low heat until melted and smooth.
* *Return* macaroni to pan and mix well.
* *Remove* two thirds of mixture to two zip-lock freezer bags and freeze.
* *Divide* remaining mixture between two well-greased oven-proof dishes and smooth top.
* *Combine* 3 tbsp. panko, 1 tbsp. shredded parmesan and a generous sprinkling of smoked paprika with a drizzle of olive oil to moisten and *divide* evenly over macaroni.
* *Bake* at 375° for 30 to 40 minutes, until heated through and golden and crispy on top, covering lightly with foil if browning too quickly.
