Ingredients

  • 4 (6-oz.) boneless pork loin chops, trimmed
  • 1 1/2 teaspoons chili powder
  • 1/2 cup salsa
  • 1/4 cup orange marmalade
  • 3/4 cup shredded low fat Colby-Jack cheese
  • 1/4 cup sliced green onions
  • Aluminum foil wrap

Preparation

Step 1

Preheat oven to 375 degrees. Place pork chops in a shallow foil-lined baking pan; sprinkle with chili powder. In a small bowl, combine salsa and marmalade; spread half of the mixture over the pork chops. Bake for 15 minutes, then spread remaining salsa mixture over pork chops and continue to bake for 20 minutes or until cooked through. Sprinkle cheese over pork, return to oven and bake for 2 minutes longer or until cheese has melted. Top with sliced green onions before serving.

SERVING SUGGESTION: Steamed new potatoes and steamed green beans.
