Lovely light Macaroons for Passover or anytime.
- 4 egg whites
- 1 1/4 C Sugar
- 14 oz shredded sweetened coconut
Beat egg whites until frothy, slowly beat in sugar just until soft peaks form.
Fold in coconut by hand.
Drop by rounded tablespoon or small ice cream scoop onto sheet pan with silpat or parchment paper. Cookies do not expand so you can put quite a few on each sheet.
Bake at 350 degrees for 12 -15 minutes.
Optional drizzle with chocolate
