Ingredients

  • 1

    (15-oz.) can no-salt-added black beans, rinsed and drained

  • 1

    large orange bell pepper, seeded and chopped

  • ½

    cup chopped jicama

  • 2

    tsp. chili powder

  • 4

    Bibb lettuce leaves or purple radicchio leaves

  • Dressing:

  • 2

    tbsp. ShopRite® white wine vinegar

  • 2

    tsp. freshly squeezed lime juice

  • 1

    tsp. Dijon mustard

  • 4

    tbsp. Filippo Berio® Extra Virgin Olive Oil

Directions

1. For the salad, in a medium bowl combine beans, bell pepper, jicama and chili powder; season with freshly ground pepper to taste. 2. For the dressing, in a small bowl whisk together vinegar, lime juice, mustard and oil. Season to taste with salt and pepper; set aside. 3. Place 1 lettuce leaf on each of 4 plates. Spoon salad into lettuce leaves, drizzle with dressing, and serve.
