Mickey's Four Cheese Tortellini

This recipe is originally from Ann's sister-in-law, Mickey. It is creamy and delicious and super easy to make.

Ingredients
- 2 tablespoons butter
- 2 1/2 tablespoons flour
- 1 1/2 cups milk
- salt and pepper to taste
- 1/8 teaspoon nutmeg
- 1 egg yolk
- 1/3 cup swiss cheese, cubed
- 1-2 tablespoons parmesan cheese, grated
- 1 package cheese tortellini, cooked and drained

Preparation
Step 1
Cook tortellini according to package directions.
Melt butter in a medium-sized sauce pan over medium heat. Add the flour and mix, stirring constantly. Gradually add the milk and whisk until thick.
Add the salt and pepper, and nutmeg.
ADd the egg yolk and the cheese, stirring constantly.
Put the pasta in a 9x13 casserole dish. Pour the cheese sauce mixture over the pasta and mix to combine.
Cook at 350 degrees for 15 minutes or until done.
