Spicy Peppered Crab Legs

This is delicious.

Ingredients

  • 3 pounds Alaskan King Crab or snow crab legs, thawed if frozen
  • 2 tablespoons vegetable oil
  • 1 stick butter, cubed
  • 6 cloves chopped garic
  • 10 thin slices peeled ginger
  • 8 scallions
  • 4 red jalapeno peppers, seeded and finely chopped
  • 2 teaspoons sugar
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce

Preparation

Step 1

1)Cut the crab legs into 3-inch pieces with kitchen sheers. Cut along one side to facilitate removing the crab meat
2)Place the remaining ingredients by the stove. Toast 2 tablespoons black pepper in a small skillet until fragrant, aboput 2 minutes.
3)Heat veg oil and butter in a large Dutch oven until sizzling
Add garlic,ginger,scallions and jalapenos; sproinkle with sugar and cook, stirring until mixture is fragrant, about 1 minute.
4)Add the crab meat, oyster sauce and soy sauce.

Cook, tossing until heated through (about 5 minutes)
Scatter the pepper on top and cook an additional minute.
