Chicken Salad - Excellent

Ingredients

  • YOU MUST MARINADE MEAT NIGHT BEFORE. Toast almonds and chow mein noodles the evening before so they are ready to go.
  • 6 cups cooked cut up chicken
  • Marinade
  • 1/2 cup oil
  • 1/4 cup vinegar
  • 3/4 cup orange juice
  • 2 tsp salt
  • 2 cups pineapple tidbits, drained
  • 2 cups grapes
  • 2 cups celery
  • 2 cups mandarin oranges
  • 2 cups toasted almonds
  • 1 cup mayonnaise
  • 1 cup miracle whip
  • Topping (must be baked. see below)
  • 2 cups chow mein noodles
  • 2 tbsp butter
  • 1 tbsp Worcestershire sauce

Preparation

Step 1

Marinate chicken in oil, orange juice, vinegar, and salt overnight

Add additional ingredients a couple hours prior to serving

Bake chow mein noodles, butter, Worcestershire sauce in 350 oven, 15 minutes

Add noodles to salad just before serving
