Slow Cooker Cheesy Chicken And Rice

this one is everybody's favorite and just so stinking easy. Here is a little hint for those of y'all who don't want to cook the rice separately: In a medium mixing bowl stir together the rice mix and water called for in the package and then add it to the ingredients in the slow cooker at the start. If you can, stir it again at some point in the day. I don't recommend this on the recipe because a lot of folks will just want to pour it in dry and add the extra water and you'll end up with dry and uncooked spots in the rice. So I'm telling you the inside tip!

Ingredients
- 4 4 4 boneless skinless chicken breasts
- 1 1 1 large onion, chopped (I use Vidalia)
- 1 1 to box 1 -8 ounce box Zatarain's Yellow Rice Mix, cooked according to directions
- 1 1 1 cup cheddar cheese
- 1 10.5 1 10.5 1 - 10.5 ounce can cream of chicken soup (regular or fat free)
- 1 1 ounce can 1 -15 ounce can whole kernel corn, drained
Preparation
Step 1
Place chicken in bottom of slow cooker. Scatter chopped onion over top. Spoon cream soup over top of that. Cover and cook on low 7-8 hours or on high 3-4 hours. A few minutes before serving, add in cooked rice, corn, and cheese. Stir to combine. Serve hot.
Low – 7-8 hours
High 3-4 hours.
This is great to put on in the morning on the weekends if you cook it on high and then have a nice meal at lunchtime.
