Ingredients
- cup shredded romaine (cos) lettuce
- 2 vdiced plum tomatoes
- 1 cup finely diced English (seedless) cucumber
- 2 thinly sliced scallions
- 2 Tbsp. chopped fresh dill or mint
- 1/4 small lemon
- 2 whole grain pita breads—halved, opened into pockets
- 1/4 cup roasted red pepper hummus
- 2 cups salad greens
- 3 oz. crumbled low-fat goat or feta cheese
Preparation
Step 1
MIX together tomatoes, cucumber, scallions, dill or mint and juice of lemon in medium bowl.
Halve pitas to for 4 pockets. Divide hummus among pockets; spread evenly into bottom of each.
Stir greens and cheese into tomato mixture; soon equal amount into each pocket.
