Greek Salad Pita Pockets

Ingredients

  • cup shredded romaine (cos) lettuce
  • 2 vdiced plum tomatoes
  • 1 cup finely diced English (seedless) cucumber
  • 2 thinly sliced scallions
  • 2 Tbsp. chopped fresh dill or mint
  • 1/4 small lemon
  • 2 whole grain pita breads—halved, opened into pockets
  • 1/4 cup roasted red pepper hummus
  • 2 cups salad greens
  • 3 oz. crumbled low-fat goat or feta cheese

Preparation

Step 1

MIX together tomatoes, cucumber, scallions, dill or mint and juice of lemon in medium bowl.

Halve pitas to for 4 pockets. Divide hummus among pockets; spread evenly into bottom of each.

Stir greens and cheese into tomato mixture; soon equal amount into each pocket.
