Baked Potato Chips with Avocado-Garlic Aioli

Ingredients
- 1 clove garlic
- 1/2 cup light mayonnaise
- 1/2 cup avocado
- 1/4 cup chopped fresh cilantro
- 1 lime, zested and juiced
- pinch of cayenne (optional)
- Coconut oil spray
- 3 large russet potatoes
- 1 tbsp. chili blend seasonings, like Urban Accents
Preparation
Step 1
With processor running, drop garlic through feed tube. Add mayonnaise, avocado, cilantro, 1 tbsp. lime juice and 1/2 tsp lime zest. Season with cayenne, if desired.
Heat oven to 400 degrees. Line 2 baking pans with foil. Coat foil with coconut oil. With mandoline, thinly slice potatoes; pat dry with paper towels.
Arrange in one layer on pans. Season with chili-blend seasoning.
Bake 10 minutes. If potatoes are not browned, turn over. Bake 3 minutes or until dark golden. Let cool. Serve with avocado aioli.
