Ingredients

  • 1 1/2 cups white sugar
  • 1 cup white Karo syrup
  • 1 cup water
  • 2 1/2 cups raw peanuts
  • 3 tablespoons butter
  • 1 1/2 teaspoons soda
  • 1 teaspoon water
  • 1 teaspoon vanilla

Step 1

Mix soda, water and vanilla and set aside.

Put water, sugar and syrup in saucepan; stir and place on stove. Cook until syrup hairs (240F). Add peanuts and stir to keep from scorching. Watch closely. Keep stirring until 290F, the peanuts are roasted and the syrup turned to amber. Remove from heat. Add butter the vanilla.

Have soda in small dish and dump in altogether and stir like the dickens. At the height of foaming, turn onto a buttered cookie sheet.

The secret to good peanut brittle is to get it out of the kettle onto the tray while still foaming but stirred enough to get soda distributed.
