Spaghetti with Chicken and Vegetable Medley

Ingredients

  • 1 Onion, finely chopped
  • 3/4 cup sliced yellow zucchini
  • 1 to 2 tblsps. olive oil
  • 4 cloves roasted garlic (optional)
  • 1/2 cup frozen peas, thawed
  • 2-1/2 cups pasta sauce
  • Salt and freshly ground pepper
  • 1 box Rigatoni Healthy Harvest Multigrain Spaghetti
  • 8 oz. boneless, skinless chicken breasts
  • Grated Romano or Asiago Cheese

Preparation

Step 1

1. Saute' onion and zucchini in oil until tender.

2. Add roasted garlic, peas and pasta sauce; simmer 3-4 minutes. Season to taste with salt and pepper.

3. Cook pasta according to package directions.

4. Grill or saute' chicken breasts 3-4 minutes per side or until cooked through; thinly sliced.

5. Spoon sauce mixture over pasta and serve topped with chicken and cheese.
