Apple Cake with Salted Caramel Sauce

Ingredients

  • Cake:
  • 1 1/3 c. vegetable oil
  • 2 c. sugar
  • 2 eggs
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 2.5 c. flour
  • 1 tsp. vanilla extract
  • 3 c. apples (peeled and chopped into small bite size pieces)
  • 1 c. chopped pecans
  • Salted Caramel Sauce:
  • 1 c. brown sugar (packed)
  • 1/2 c. Half and Half
  • 4 Tbs. butter
  • 1 to 1.5 tsp. seasalt (depending on taste - may need to add more)
  • 1 tsp. vanilla extract

Step 1

Cake:

Cream together oil, sugar, eggs, and vanilla. Add dry ingredients and then the apples and pecans. (Batter will be very thick.) Grease a 9 x 13 pan and bake at 350 for 50-60 minutes or until golden brown.

Salted Caramel Sauce:

In a small to medium saucepan, mix together the brown sugar, Half and Half, butter and salt. Over medium low heat, bring to a boil, gently whisking or stirring constantly. Continue to softly boil for 10-12 minutes or until it becomes thick. Remove from heat and add the vanilla. Return to heat and continue stirring for 1 to 2 minutes more to attain additional thickness.

Drizzle over cake right before serving and while the sauce is still warm.
