Smashed Peas with Ricotta Toasts

Ingredients
- 16 oz. package frozen sweet peas
- 12 oz. package frozen edamame, shelled
- 1 T olive oil
- 4 cloves garlic, sliced
- 2 T lemon juice
- 2 t freshly ground black pepper
- 1/2 t kosher salt
- 1/4 C fresh mint
- 8 oz baguette, sliced and toasted
- 1 C ricotta cheese
- kosher salt and black pepper
- olive oil drizzle
Preparation
Step 1
1. Cook peas and soybeans in small amount of boiling water for 5 minutes. Drain and transfer to food processor to puree.
2. In small skillet, heat oil over medium heat and cook garlic until tender. Stir into peas with lemon juice, pepper, salt, and mint.
3. Spread baguette slices with ricotta cheese. Arrange on baking sheet and broil about 4 inches away from heat until ricotta is warm. Sprinkle with salt and pepper.
4. To serve, drizzle peas with olive oil and sprinkle with additional pepper and salt. Serve with smashed pea mix.
