Ingredients
- 4 tablespoons olive oil
- Juice of one lemon
- salt and freshly ground pepper to taste
- 2 ripe pears, cored and thinly sliced
- 6 ounces arugula
- 1/2 cup goat cheese, crumbled
- 1/3 cup walnut halves, lightly toasted
Preparation
Step 1
In a small bowl, whisk together olive oil and lemon juice.
Season to taste with salt and pepper.
Set aside for now.
Place sliced pears in a large bowl.
Whisk the olive oil and lemon juice again.
Pour over sliced pears.
Toss gently to combine.
Add arugula and toss to evenly combine.
Season with salt and pepper again, if needed.
Arrange on a large platter or divide evenly between 4 salad plates.
Garnish with the crumbled goat cheese and walnuts.
