Ingredients
- Crust:
- 1 1/2 cups shortbread cookie crumbs
- 5 tbsp melted butter
- Cheesecake:
- 4 , 8 oz packages cream cheese
- 3 cups mashed bananas
- 1 cup sugar
- 1/2 cup banana liqueur
- 2 tsp vanilla
- 8 eggs
- Topping:
- 1 1/2 cups sour cream
- 1 tbsp sugar
- 1 tbsp banana liqueur
- 1 tsp vanilla
- Garnish:
- Kiwi, orange, papaya and strawberry slices
Preparation
Step 1
Crust:
Preheat oven to 350F. Oil 9" spring-form pan. Cut circle of foil large enough to cover bottom and sides of pan. Combine crumbs and butter and press into bottom of pan.
Cheesecake:
Combine cream cheese, sugar, bananas, liqueur and vanilla in food processor and mix until smooth. Add eggs 1 at a time, mixing well after each addition. Spoon into crust.
Place in roasting pan and 1" of water. Bake for 80-90 minutes. Cool.
Top with topping and garnish with fruit.
