Ingredients

  • 2/3 c. flour
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 2 tsp. pumpkin pie spice
  • 15 oz pumpkin puree
  • 1/2 c. sugar
  • 1/4 c. brown sugar
  • 2 large eggs
  • 1 tsp. vanilla
  • 3/4 c. evaporated milk

Step 1

Heat oven to 350°. Line muffin tins with paper cups. Whisk together flour, baking powder, baking soda, salt & pumpkin pie spice. In another bowl, whisk the pumpkin puree, sugar, brown sugar, eggs, vanilla & milk til well combined. Add dry ingredients; beat til smooth. Fill cups with 1/3 c. batter. Bake 20 minutes. Cool in pan. Chill. Top with whipped cream.
