Hearty Country Stew - Vegan

This is a wonderful cold winter comfort stew like mom used to make but it is "animal friendly". It is definitely one of my favourite dinners in the winter. This can also be done in the crockpot for 8 hours on low. If cooking in the crockpot omit the olive oil and you do not have to saute the onion and garlic.

Ingredients

  • 1 large onion chopped
  • 1 clove garlic minced
  • 2 Tbsp olive oil
  • 12 oz faux beef strips
  • 5-6 carrots peeled and diced
  • 3-4 potatoes scrubbed and cut into bite size pieces
  • 10 oz frozen peas
  • 10 oz frozen corn
  • 4 cups vegetable broth - can also use "beef style" bouillin cubes
  • 14 oz can diced tomatoes, including liquid
  • 1 Tbsp A1 sauce or vegan Worcestershire sauce
  • 2 bay leaves
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp ground allspice
  • 1/4 tsp dried basil
  • 1 tsp sugar
  • 2 Tbsp cornstarch dissolved in a small amount of cold water

Preparation

Step 1

In a large pot over medium heat, saute the onion and garlic in the olive oil until the onion is transparent. Add the remaining ingredients (except the cornstarch) and simmer uncovered for 30 minutes, stirring occasionally.

Stir in the cornstarch mixture to thicken. Serve hot.
