Extra-Crisp Waffles

Beating egg whites seperately from the yolks makes these waffles crispy.

Ingredients

  • 2 cups sifted cake flour (can use regular flour--just use less)
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 egg yolks
  • 1-1/4 cup milk
  • 1/3 cup melted butter or oil
  • 2 egg whites

Preparation

Step 1

1. Heat waffle baker. Mix and sift flour, baking powder, and salt.

2. Beat egg yolks until light, combine with milk. Beat egg whites until stiff but not dry; set aside.

3. Add milk mixture slowly to dry ingredients, stirring until batter is smooth. Add melted butter or oil.

4. Fold in beaten egg whites, leaving some puffs.

5. Bake in waffle iron.
