Ingredients

  • DRY INGREDIENTS
  • 1 1/2 cups rice flour
  • 1/3 cup cornstarch
  • 1/3 cup tapioca starch
  • 1 1/2 tsp xanthan gum
  • 1 tbs gluten free baking powder
  • 3/4 tsp salt
  • WET INGREDIENTS
  • 2 eggs
  • 2/3 cups cranberry juice
  • 1 tsp cider vinegar
  • 1/4 cup vegetable oil
  • 2/3 cups orange marmalade
  • 1/3 cup water
  • 1 cup cranberries, fresh or frozen (don't thaw)

Preparation

Step 1

Preheat oven to 350 degrees

Blend dry ingredients together until smooth

Whisk together the wet ingredients thoroughly with an electric mixer (minus the cranberries)

Take the wet ingredients and combine with the d ingredients. Fol in the cranberries then pour in greased muffin tins. Let the mixture sit for about 30 minutes then bake for 25 minutes.
