Ingredients
- 1 c. mushrooms, sliced
- 1 Tbsp Soy Sauce
- 1 c. spinach leaves, quartered
- 2 eggs,lightly beaten
- 2 green onions, chopped
- 4 c. chicken broth
- I tsp. Salt
- 2 Tbsp cold water
- I Tbsp. Cornstarch
Preparation
Step 1
put chicken broth in a lg. Pot, and add the sliced mushrooms, green
onions, spinach, salt and soy sauce. Stir well.
Simmer for 15 min.
Mix the cold water and cornstarch, and add mixture to the soup.
Heat until thick.
Turn off the burner. Add the eggs in a slow stream and whisk
gently.
