Fish Sticks

Ingredients

  • 2 egg whites
  • 1 lb fish (salmon)
  • 1 c flour
  • 1 c flavoured bread crumbs
  • ¼ c parmesan cheese
  • Extra virgin olive oil to drizzle over the fish sticks
  • Baking sheet lined with parchment paper
  • **Mayo Sauce**
  • 1 c yogurt
  • 1/3 c mayo
  • ¼ tsp mustard
  • Chopped flat leaf parsley

Preparation

Step 1

1. Make an egg wash with just the egg whites – no water. In one plate put the flour – in another plate mix in the cheese and breadcrumbs.
2. Cut the salmon into ¼” thick sticks. 1st put the fish sticks in the flour, then place in the egg – then put into the breadcrumbs.
3. Drizzle with extra virgin olive oil before baking in the oven. Bake in 350 oven for 20 mins or until sticks are golden brown.
4. Serve with mayo sauce.
