Veggie Frittata Cups
- 2 Tbl oil
- 2 1/2 C shredded hash brown potatoes
- 2 C cut up mixed vegetables (broccoli florets, red peppers, shredded carrots)
- 1 C shredded Sharp Cheddar Cheese
- 8 eggs
- 3 T milk
- 1/4 C Parmesan cheese
Preparation time 20mins
Cooking time 35mins
Heat oil. Add potatoes and vegetables, mix lightly.
Cook 6-8 minutes until potatoes are browned.
Spoon into 12 muffin pan cups, sprayed with cooking spray.
Wisk remaining ingredients, pour over potatoes.
Bake 15 minutes at 375F or until knife inserted into center comes out clean.
Cool 5 minutes before removing from pan.
