Ingredients
- 1/2 c. Kosher salt
- 2 T. dried sage
- 1 T. dried thyme
- 10 oz kikkoman Soy Sauce
- 2 gallons cold water
- 1/2 c. sugar
- 2 T. dried celery seed

Step 1
Remove giblets and turkey neck: rinse turkey inside and out. In a large stock pot, mix water with remaining ingredients. Stir until salt is fully dissolved.
Place turkey in brine and refrigerate overnight or at least 8 hours. Remove turkey from the brine, rinsing well. Roast turkey as usual.
