Brie, apricot and cracked black pepper grilled cheese

Ingredients

  • 4 slices walnut-raisin bread
  • 6 ounces brie, thinly sliced into 6 pieces , each 1 ounce and about 4 inches long and 1/4-inch thick
  • 1/2 teaspoon cracked black pepper
  • 2 heaping tablespoons apricot preserves, preferably Harvest Song brand
  • 4 teaspoons butter, room temperature

Preparation

Step 1

Heat a 10-inch non-stick pan over low heat. Place half the brie slices on one bread slice. Sprinkle with 1/4 teaspoon cracked pepper. On a second slice, spread 1 generous tablespoon of preserves. Place the two sides of the sandwich together.

Spread 1 teaspoon of butter on each outer side of the sandwich and place into pan. Cook one side until the bread is browned and cheese is melted, at least 2 minutes. Flip over to brown the other side. Repeat process for second sandwich.
