Ingredients
- 1/4 c EVOO
- 1/3 c pineapple juice
- 1/4 c lime juice
- 2 mangoes, peeled & chopped
- 1 clove garlic, minced
- 2 T chopped cilantro (optional)
- 1/2 t curry powder
- 2.25 t salt
- 4 boneless, skinless [turkey] breasts
- 1 t black pepper
Preparation
Step 1
1. Combine 2T EVOO, pineapple & lime juices, mangoes, garlic, cilantro, curry powder & 1/4t salt in a blender.
2. Process until smooth.
3. Set aside.
4. Season [turkey cutlets] w/remaining 2t salt & pepper.
5. Heat 2T EVOO in a non-stick skillet & cook [turkey] about 5 min.
6. Turn & cook 5 min longer or until golden brown.
7. Place [turkey] on serving plates.
8. Spoon mango sauce over [turkey] and serve.
