Ingredients

  • Oil (for deep frying)
  • 1 cup milk
  • 1/4 cup sugar
  • 1 egg, beaten to blend
  • 1 tsp cinnamon
  • 1/2 tsp vanilla
  • 1/4 tsp freshly grated nutmeg
  • 1/4 tsp salt
  • 1 cup finely chopped or crushed canned pineapple in juice, well drained (reserve 3 tblsp juice
  • 2 cups flour
  • 1 tblsp baking powder

Preparation

Step 1

Heat oil in a large saucepan or deep fryer to 350. Combine milk, sugar, egg, cinnamon, vanilla, nutmeg and salt in medium bowl and beat well. Stir in pineapple with reserved 3 tablespoons with juice. Sift in flour and baking powder and stir just until dry ingredients are evenly moistened.

Drop batter into hot oil in batches by rounded tablespoons. Fry until deep golden, about 3 minutes per side. Drain well on paper towels. Serve immediately.
