Dry Rubbed Talapia Sauteé

Ingredients

  • 2 tablespoons flour
  • 2 tablespoons paprika
  • 1 tablespoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 ⁄2 teaspoon black pepper
  • 1 ⁄2 teaspoon salt
  • 1 ⁄4 cup butter (for frying)
  • 4 -6 tilapia fillets, frozen

Preparation

Step 1

Thaw frozen fillets in the package, in a bowl of warm water or sink for approx 10 minute Meanwhile combine spices in a bowl. Dip thawed Tilapia in spices and pan fry in butter on medium for approx 5 min each side. Enjoy!

To create pan sauce:

Drain the excess fat (if any)
Add oil to the fond (crusty brown bits in pan)
Add finely chopped onions or shallots
Add wine (white or red) and scrape up the bits
Let reduce
Add chicken or beef broth and reduce again
Add any juices that have accumulated from the cooked meat
Add cream and or other thickening agent for a thicker consistency
Taste and season as necessary - salt, herbs, lemon, etc.
