Ingredients
- 2 T. evoo
- 1 shallot chopped
- 3-4 plum tomatoes, cubed
- 1-2 t. capers
- 4-6 greek olives
- 2 sprigs Italian parsley, chopped
- 2 flounder filets
Preparation
Step 1
Heat oil, saute shallot, add tomatoes simmer 10 minutes. Add capers, olives, parsley.
ut filets on top of mixture add alittle sauce on top , season, cover and simmer 5 min, or until done
