Baked Sweet Potatoes

Ingredients

• 8 sweet potatoes
• 1 c. milk
• 1 tsp. vanilla
• 3 T. sugar
• 1/2 stick butter
• 1/4 tsp. cinnamon
• 4 dashes nutmeg
• 1 T. orange juice
• 1 small can pineapple tidbits, drained
• marshmallows

Preparation

Step 1

Bake potatoes until done.  Peel; mash.  Scald milk; add vanilla, sugar & butter.  To potatoes, add cinnamon, nutmeg & orange juice.  Add milk & pineapple.  Layer in oven safe bowl, potatoes, marshmallows & potatoes.  Bake at 350° until very hot.  Top with additional marshmallows & brown.
