Steamed Wild Salmon with Fennel and Dill

Ingredients

  • 2 4-6oz. skinless wild salmon fillets
  • 1 fennel bulb cut into wedges
  • 1/2 lemon
  • 1/4 cup fennel fronds, chopped fine
  • 1/4 cup fresh dill, chopped fine
  • 1 shallot, minced
  • 2 teaspoons extra-virgin olive oil
  • Fresh lemon juice, to taste
  • Salt
  • Coarse ground black pepper
  • Additional lemon wedges, for serving

Step 1

Prepare steamer: lightly oil steamer basket insert; set aside. add 1" of water to seamer bottom, and bring to a boil.

Meanwhile, season salmon with salt and pepper to taste. Place salmon in steamer basket. Squeeze some lemon juice over fennel, then arrange fennel wedges around salmon.

Steam salmon and fennel wedges until salmon gives when pressed, about 6 minutes.

While fish is steaming, stir together the chopped fennel fronds, dill, shallot, extra-virgin olive oil, and a lemon juice to taste; season with salt and pepper to taste.

To serve, divide salmon and fennel between two plates. Spoon herb dressing over fish, and serve with additional lemon wedges on the side.
