PINEAPPLE CHICKEN

Ingredients

  • 1 cup crushed pineapple packed in its own juice, drained
  • 1/4 cup soy sauce
  • 1-2 tblsp wine vinegar
  • 2-3 tsp prepared mustard
  • 1 tsp ground ginger
  • 3 lb chicken, cut up and skinned
  • 2 cups slice fresh mushrooms
  • 1 small green pepper, seeded and cut into chunks
  • 1 green onion, chopped
  • Minced parsley (garnish)

Preparation

Step 1

Combine first 5 ingredients in large measuring cup. Cook on high in microwave until is just reaches boiling point. Taste and adjust seasoning as necessary. Arrange chicken in shallow oval dish with large pieces toward outside. Pour sauce over chicken, turning to coat all sides. Cover with waxed paper and cook on high 10 minutes. Turn chicken over and baste with sauce. Add mushrooms and green pepper and cook on high an additional 12-15 minutes. Check at bone for doneness. Sprinkle with green onion and parsley and serve.
