Ingredients

  • Orange Icing:
  • 2 cups buttermilk baking mix
  • 3/4 cup mincemeat
  • 1/2 cup milk
  • 1/4 cup sugar
  • 1 egg
  • 2 tblsp butter, melted
  • 1 1/2 cups powdered sugar
  • 2 tblsp orange juice
  • 1/2 tsp grated orange peel

Preheat oven to 400. Grease 6 cup ring mol. Combine mix, mincemeat, milk, sugar, egg and butter in a large bowl and beat well, about 30 seconds. Pour into prepared mold. Bake until browned, about 25 minutes. Transfer to rack and let cool in pan 5 minutes. Invert onto rack and cool 10 more minutes.

Meanwhile, prepare icing. Combine ingredients in medium bowl. Drizzle topping evenly over cake. Serve at room temperature.
